Vegan Chilli


This is the best chilli I've ever had (granted, I've only had chilli maybe... once before this?) but still. It's amazing. It's vegan. It's gluten free. Get excited.

What I used:

  • Red Onion

  • Peppers (green & red)

  • Mushrooms

  • Vegetable Broth

  • Olive Oil

  • Six Bean Medley (canned)

  • Kidney Beans (canned)

  • Chilli Style Diced Tomatoes (canned)

  • Spices (paprika, chilli powder, black pepper)

  • Cilantro

What I did:

  1. Cut onions, peppers and mushrooms

  2. Heat olive oil in a pot & sauté veggies

  3. Pour in beans, diced tomatoes and vegetable broth

  4. Cut cilantro (leave some behind to garnish)

  5. Add cilantro & spices to the chilli

  6. Remove from heat and pour into a bowl

  7. Garnish with cilantro (this really isn't necessary but it'll make you feel fancy so I highly recommend)



What you can do differently:

  • Use less/different kinds of beans

  • Use mushroom broth instead of vegetable broth

  • Use fresh instead of canned ingredients
