Chickpea Curry


Chickpea Curry

You know when you get bored and decide to grab a bunch of things from your cupboard, throw them into a pot and hope it tastes great?

This recipe was born from one of those moments.
But I'll save you the trouble of guessing what should go into it and just give you the recipe instead.

What I used:

  • Chickpeas (canned)

  • Curry Powder (first two ingredients are probably very obvious from the title)

  • Onion

  • Garlic

  • Bell Peppers

  • Spinach

  • Creamed Coconut

  • Vegetable Broth

  • Tomato Paste

  • Oil

What I did:

  1. Rinse chickpeas

  2. Dice Peppers and onions

  3. Mince garlic

  4. Sautee onions & garlic

  5. Throw in and sautee diced peppers

  6. Pour in vegetable broth (just pour until it feels right, if you need to add more later it's ok)

  7. Add 1/2 pack of creamed coconut and melt down until everything is nice and c r e a m y.

  8. Add in chickpeas

  9. Shake in some curry powder (again.. just keep going till that voice in your head whispers "that's enough" )

  10. Stir in a can of tomato paste

  11. Sprinkle in some spices (cayenne peppers, turmeric, paprika, coriander)

  12. Stir in spinach until it's wilted down.


What you can do differently:

  • You can probably use water instead of vegetable broth

  • If you don't have all the spices that's ok, I really just added them int o feel like I was doing something. The main thing I'd try to add is cayenne pepper or paprika

  • Don't use spinach. You can't taste it at all but I just added them in to feel healthy haha

  • Now that I think about it you don't really need to add in the peppers either... again.. that's just to add some more nutrients
